I use coconut milk which has 1 gram of carb per fourth cup to make Jell-o sugar free pudding. There are six grams per serving plus two carbs from the coconut milk. There is probably a half gram of fiber in the milk which lowers the overall carb count a little. I like it with pistachio or bananna pudding. Enjoy!
