Luscious Artichoke Chicken

Luscious Artichoke Chicken
4 Skinless, Boneless Chicken Breasts, cut into smaller pieces
1 small jar artichoke hearts, cut into smaller pieces
1 Tbsp Olive Oil and 1 Tbsp Butter
Salt and Pepper
1/4 cup Wine
1/2 cup Heavy Cream

Put Oil and butter in Saute pan. Place chicken pieces and Artichoke hearts in pan and saute until browned. Add salt & pepper to taste. Add wine and simmer for a few minutes to cook off the alcohol. Remove chicken from pan and place on a serving platter. Add the Heavy cream and stir through the bits and artichoke pieces in the pan. Pour all over the chicken.

Serve with some fresh veggies which have been seasoned with Salt and pepper and tossed with melted butter. Sprinkle the top with some fresh shredded Parmesan cheese.

Also serve a fresh salad.
